Zucchini-Lime Marmalade

Note: Before beginning, you will need to look up CURRENT recommended canning instructions for this type of marmalade. I’ve included the ingredients and cooking instructions, but NOT the processing instructions.

Ingredients

  • 4 cups coarsely shredded zucchini
  • 2 cups water
  • 1/2 cup fresh lime juice (about 4 limes)
  • 1 pkg Certo fruit pectin crystals
  • 5 cups sugar
  • 3 tbsp grated lime rind

Preparation

Step 1

In large pot, combine zucchini, water and lime juice. Bring to a boil and boil gently 10 minutes. Stir in fruit pectin crystals. Return to boil. Stir in sugar and lime rind. Return to hard rolling boil that cannot be stirred down. Boil, stirring constantly, one minute. Remove from heat. Stir 5 minutes. Ladle into hot sterilized jars to within ½-inch of tops. Wipe edges with damp cloth.
