Ingredients
- 1/2 cup unsalted butter
- 1 3/4 cups sugar
- 2 eggs
- 1 1/4 cups milk
- 2 1/4 tsp. vanilla extract
- 2 1/2 cups sifted all-purpose flour
- 2 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup champagne
- garnish: powdered sugar, strawberries
- frosting (optional)
Preparation
Step 1
1. Preheat oven to 350. Line muffin pans with 18 baking cups.
2. Beat butter and sugar at medium speed with an electric mixer, 3 to 5 minutes until creamy. Gradually add eggs, beating after each addition.
3. Combine vanilla and milk.
4. Sift together flour, baking powder and salt. Add to butter mixture alternately with milk; beginning and ending with flour. Beat on low after each addition until blended. Stir in champagne.
5. Spoon batter into cups, filing each 2/3 full. Bake for 19 to 21 minutes. Remove from pans; cool completely on wire racks. Garnish with powdered sugar and sliced strawberries or frosting.
