Christmas or Wedding Cake

Ingredients

  • 2 cups seedless raisins
  • 1 cup currants
  • 1 1/2 cups separated seeded raisins
  • 1 1/2 cups red and green maraschino cherries, drained
  • 1 cup almonds, slivered
  • 1 cup dates, chopped
  • 1 1/2 cups candied peels and citron
  • 1/2 cup candied pineapple or other fruits
  • 1 cup zucchini, grated
  • 1 tbsp candied ginger, chopped
  • 3 cups flour, sifted once
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/4 tsp mace
  • 1/4 tsp cloves
  • 1 cup butter
  • 1 1/4 cups brown sugar
  • 6 eggs
  • 1/4 cup molasses
  • 1/4 cup cold strong coffee

Preparation

Step 1

Wash and dry the raisins and currants. Cut the cherries and almonds. Prepare the dates, peels and citron, candied pineapple or other fruits, ginger and the zucchini. Mix and sift twice, the flour, baking powder, salt and spices. Add prepared fruits, nuts and zucchini. Cream butter; gradually blend in sugar. Add eggs, beating well, stir in molasses. Add flour mixture to creamed mixture alternately with coffee. Preheat oven to 300 F (slow) for 2 ¾ to 3 hours.
