Blueberry and Bran Muffins

Ingredients

  • 1 cup whole wheat flour
  • 2 tbsp wheat germ
  • 2 tbsp bran
  • 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1/4 cup oil
  • 1/4 cup honey
  • 1 egg
  • 1/2 cup milk
  • 1 cup grated zucchini
  • 1/4 cup sunflower seeds
  • 1/2 cup blueberries

Preparation

Step 1

Combine dry ingredients in a large bowl. In a small bowl combine oil, honey, egg and milk. Add liquid ingredients to dry ones. Stir in zucchini, sunflower seeds and blueberries. Spoon into buttered muffin tins, filling them about 2/3 full. Bake at 325 F for 25 to 30 minutes.
