Cantaloupe, Grape & Feta Cheese Salad

Ingredients

  • 3 Tbsp. olive oil
  • 1 tea. grated lemon zest
  • 2 Tbsp. lemon juice
  • 2 tea. Dijon mustard
  • 1/2 tea. sugar
  • 1/4 tea. salt
  • 1/8 tea. pepper
  • 5 cups baby spinach leaves, about 5 oz.
  • 1 1/2 cups thinly sliced, poeeled, seeded cantaloupe wedges
  • 1 cup seedless grapes, halved
  • 1/2 cup crumbled feta cheese
  • 13 cup packed fresh mint leaves
  • 1/4 cup thinly sliced red onion

Preparation

Step 1

In a large bowl, whisk together oil, lemon zest and juice, mustard, sugar, salt and pepper. Add spinach, cantaloupe, grapes, cheese, mint and onion; lightly toss to combine.
