Ingredients
- Crust:
- 1 3/4 cup Graham crumbs
- 3/4 cup melted butter
- 1/2 cup sugar
- Filling:
- 6 large eggs
- 1 cup sugar
- 1 teaspoon vanilla
- 2 3/4 cups cream cheese softened
- 2 ounces brandy
- 3 ounces of dark cream de cocoa
- Topping:
- 2 cups sour cream
- 1/3 cup sugar
- 1 teaspoon vanilla
Preparation
Step 1
To make crust:
Mix crust ingredients together and press into 9 inch spring form pan.
To make filling:
Combine eggs, sugar and vanilla and mix to well blended.
Add softened cream cheese in small chunks and mix till smooth after each addition.
Pour in brandy and creme de cacoa and mix well.
Pour into spring form pan and bake at 350° for 1 to 1 1/4 hours.
Turn pan halfway through baking. Shake gently to make sure middle is set.
Remove cake from oven and let set five minutes.
To make topping:
mix all ingredients together and spread over top of cheesecake.
Return to oven and bake for 10 more minutes.
