Ingredients
- 2 tablespoons of cornstarch
- 1 cup of sugar
- 1 tablespoon lemon zest
- 3 tablespoons of lemon juice
- 2 eggs
- 1 cup of hot water
- ¾ cup of flour
- 1 teaspoon of baking powder
- ¼ teaspoon of salt
- ¾ cup of brown sugar
- 2/3 cup of breadcrumbs
- ½ cup of coconut
- ½ cup of soft butter
- 2 apples
Preparation
Step 1
1. Preheat the oven at 350 and butter a 9x6x1/12 pan.
2. Sift the cornstarch in the sugar in a pan and add lemon zest and lemon juice.
3. Add eggs and beat well.
4. Add hot water, slowly stirring.
5. Cook stirring over low heat until the mixture thickens. Cool.
6. Sift flour, baking powder and salt. Add brown sugar, breadcrumbs and coconut.
7. Add the butter with a fork until crumbled.
8. Put half of the mixture in the pan and work with a fork.
9. Peel and cut the apples and spread over the base.
10. Cover with the lemon mixture.
11. Sprinkle the rest of the mixture.
12. Bake for 40-45 minutes. Serve with table cream or ice cream.
