Ingredients
- 2 Tbsp butter
- 1 1/2 cups sliced shiitake
- 3 scallions, chopped
- 1 1/2 tsp Dijon mustard
- 2 Tbsp water
- 2 Tbsp boursin
- 1 5in piece French bread, sliced open
- 1/4 cup mixed baby greens
Preparation
Step 1
In a skillet over med-high heat-melt butter. Add shrooms and scallions, cook until soft. In a small bowl, mix mustard and water. Add to skillet, cook, stirring until water evaporates. Spread boursin on bottom of bread, place mushrooms and baby mix. Top with remaining bread.
