Ingredients
- Serves 6
- Cook 6 oz chorizo removed from its casing and 1 chopped shallot in 1 tsp olive oil over medium heat in saucepan, breaking up lumps, until cooked through, 4 minutes.
- Stir in 2 Tbsp all-purpose flour, 4 cups 2% milk, 3 cups fresh corn kernels, 1/2 lb quartered new potatoes, and 1/4 cup chopped chives.
- Simmer until potatoes are tender, about 20 minutes. Season to taste. (Makes 6 1/2 cups.)
