Ingredients

  • Crust:
  • 1/2 Cup Graham Cracker Crumbs
  • 2 Tablespoons Unsalted Butter, Melted
  • 2 Tablespoons of Sugar
  • Filling:
  • 8 oz. Pumpkin Puree
  • 1 Tablespoon Ground Cinnamon
  • 1/4 Teaspoon Ground Ginger
  • 1/8 Teaspoon Ground Cloves
  • 12 oz. Cream Cheese, softened
  • 1/2 Cup Sugar
  • 2 Eggs
  • 1/2 Teaspoon Vanilla Extract

Preparation

Step 1

Preheat Oven to 325 degrees

Lightly butter wells ramekins or small cheescake pans.

Crust:
Mix dry ingredients, add butter and stir until blended. Divide mixture umoung wells and press using a shot glass. Bake until crusts are set, about 10 minutes. Let cool completely.

Reduce oven temp to 300 degrees

Filling:
Stir together pumpkin, cinnamon, ginger, and clove. Set aside.

In large mixer bowl, mix cream cheese and sugar on low speed. Add eggs one at a time until blended, beat in vanila. Add pumpkin mixture and mix on low speed until blended, about 1 minute. Pour batter into crusts.

Bake 18-20 minutes. Remove from oven and let cool. Refrigerate for 3 hours before serving.
