Killer Coconut-Walnut Shortbread Bars

Ingredients

  • For Glaze:
  • 3 c. (6 sticks) butter, room temp.
  • 1 3/4 c. powdered sugar
  • 4 c. & 2 TBSP flour
  • 4 tsp. cornstarch
  • 7 eggs
  • 3 c. brown sugar (firm-packed)
  • 1 TBSP. vanilla
  • 1 TBSP. lite corn syrup
  • 5 1/2 c. (19 oz.) chopped walnuts
  • 3/4 c. coconut
  • 1 egg beaten w/ 1 TBSP. water

Preparation

Step 1

Rack in lower 1/3 of oven. Preheat 275.
Cream butter,powdered sugar until light and fluffy.
Blend in flour and cornstarch.
Press in 12 x 17 baking pan. (Flour hands as needed.)
Pierce with fork.
Bake 70-90 min. until golden brown.
Remove/cool 10-15 min.
Meanwhile, blend eggs, brown sugar, vanilla and corn syrup in large bowl.
Mix in nuts and coconut.
Brush shortbread w/ egg glaze.
Spread walnut mixture over shortbread.
Bake until top is set, 25-30 min.
Cool completely.
Cut into 2" x 1" bars/
Store in airtight container.
