  • 3/4 t SALT, DIVIDED
  • 1/4 t GARLIC POWDER
  • 2 EGGS, BEATEN
  • 1/2 C PANKO
  • 1/2 C GRATED PARMESAN CHEESE
  • 1/4 t CAYENNE PEPPER
  • 2 MEDIUM ZUCCHINI, HALVED CROSSWISE AND EACH CUT INTO 1/2 INCH STICKS

Step 1

HEAT OVEN TO 450* SPRAY LARGE BAKING SHEET WITH OLIVE OIL COOKING SPRAY. COMBINE FLOUR, 1/4 t SALT, GARLIC, PEPPER,IN SHALLOW DISH.
PLACE EGGS IN SHALLOW BOWL.
COMBINE PANKO, CHEESE, REMAINING SALT, AND CAYENNE PEPPER IN ANOTHER BOEL. DIP ZUCCHINI IN FLOUR MIXTURE. DIP IN EGG. ROLL IN PANKO MIXTURE. ARRANGE ON BAKING SHEET, SPRAY WITH OLIVE OIL SPRAY.
BAKE 15-20 MINUTES OR UNTIL TENDER AND GOLDEN BROWN.
