Ingredients
- 4 HUSKED EARS OF CORN (I USE REGULAR FROZEN CORN)
- 1 LG DICED RED ONION
- 1 DICED RED PEPPER
- 1/3 C OLIVE OIL
- 1/4 C RED WINE VINEGAR
- 1 TBSP MINCED GARLIC
- 4-8 DROPS HOT SAUCE
- 1 TSP CHILI POWDER
- 1/4 C FRESH OREGANO OR 4 TSP DRIED
- 1/2 C LIME JUICE
- 2 AVOCADOS
- SALT AND PEPPER TO TASTE

Step 1
IF USING FRESH CORN, BLANCH FOR 3 MINUTES AND COOL
MIX ALL BUT AVOCADO IN A BOWL. CAN BE MADE AHEAD.
JUST BEFORE SERVING, PEEL AND DICE AVOCADO AND ADD TO SALSA.
