  • 4 HUSKED EARS OF CORN (I USE REGULAR FROZEN CORN)
  • 1 LG DICED RED ONION
  • 1 DICED RED PEPPER
  • 1/3 C OLIVE OIL
  • 1/4 C RED WINE VINEGAR
  • 1 TBSP MINCED GARLIC
  • 4-8 DROPS HOT SAUCE
  • 1 TSP CHILI POWDER
  • 1/4 C FRESH OREGANO OR 4 TSP DRIED
  • 1/2 C LIME JUICE
  • 2 AVOCADOS
  • SALT AND PEPPER TO TASTE

Step 1

IF USING FRESH CORN, BLANCH FOR 3 MINUTES AND COOL

MIX ALL BUT AVOCADO IN A BOWL. CAN BE MADE AHEAD.

JUST BEFORE SERVING, PEEL AND DICE AVOCADO AND ADD TO SALSA.
