Gingersnap Scones with Espresso Glaze

Ingredients

  • Scones:
  • 1 3/4 cup flour
  • 1/4 cup gingersnap crumbs
  • 1/4 cup sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 cup butter
  • 1/2 cup buttermilk
  • 1 egg beaten
  • Glaze:
  • 1 Tbs. hot water
  • 1 1/2 tsp. instant coffee
  • 3/4 cup powdered sugar, sifted

Preparation

Step 1

pre heat oven to 400

mix 1st 6 ingredients
cut in butter
add buttermilk and egg
turn onto floured surface
lightly knead 4x
pat into 10" circle on baking sheet
cut into 10 wedges 3/4 of way through

cook 15 min.

combine glaze ingredients, whisk until smooth
drizzle over baked scones
