Ingredients
- 2 pounds firm-fleshed white fish, cooked
- 1/4 teaspoon grated lemon peel
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup basil mayonnaise*
- 4 French rolls, split
- 4 leaves Romaine lettuce
- 1/4 cup thinly sliced red onion
- *Basil Mayonnaise
- 1 cup low fat mayonnaise
- 1 teaspoon grated lemon peel
- 1 tablespoon lemon juice
- 1 cup loosely packed fresh basil leaves
Preparation
Step 1
In a medium bowl, combine first 6 ingredients (fish through pepper); toss gently. Spread basil mayonnaise evenly on cut sides of rolls. Place lettuce and fish mixture on bottom halves of rolls, top with onion and cover with rolls tops.
*Place all ingredients in a blender container; cover and process until smooth. Pack in an airtight container and refrigerate for up to 1 week.
