Corned Beef and Cabbage - Slow-Cooker

Ingredients

  • Cooking time: 9 hours. Serves 8
  • 4 large carrots, peeled and cut into matchstick size pieces
  • 10 baby red potatoes, quartered
  • 1 onion, peeled and cut into bite-sized pieces
  • 4 cups water
  • 1 - 4 lb. corned beef brisket with spice packet
  • 6 oz. beer
  • 1/2 head cabbage, coarsley chopped

Step 1

Place veggies in slow cooker, pour water and place brisket on top of veggies. Pour beer over brisket and sprinkle spice packet on meat. Cover and set cooker on high. Cook brisket for about 8 hours. One hour before serving stir in the cabbage and cook for one more hour.
