Layered Lemon Dessert

Ingredients

  • 2 c flour
  • 2 sticks butter
  • 2 c pecans
  • 2 - 8 oz cream cheese
  • 2 c Cool whip
  • 2 c sifted powdered sugar
  • 2 cans condensed milk
  • 4 egg yolks
  • 1 c lemon juice
  • 1 can crushed pineapple (squeeze excess juice out with paper towels)
  • 1 1/2 whipping cream
  • 3/4 c sugar
  • 1/2 envelope plain gelatin

Preparation

Step 1

In a 3 qt casserole dish
1st Layer:
2 c flour, 2 sticks butter, & 2 cups chopped pecans. Mix together in food processor til it resembles meal. Pat into dish, pressing hard.
Bake @ 350 until brown. Let cool
2nd Layer:
2- 8oz cream cheese, 2 c Cool Whip, 2 cup sifted powdered sugar. Beat with mixer and when well blended pour into cool crust.
3rd Layer:
2 cans condensed milk, 4 egg yolks, 1 cup lemon juice, & 1 can of crushed pineapple. Beat eggs, add lemon juice slowly, and add cond. milk and pineapple.
4th Layer:
1 1/2 whipping cream, 3/4 c sugar, and 1/2 envelope plain gelatin. Pour whipping cream into chilled mixing bowl. Mix sugar and gelatin together. Begin beating cream and slowly add sugar mixture. Beat until fairly stiff and spread over 3rd layer. Put in Freezer.
