Ingredients

  • vegetable oil spray
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded colby cheese (may use cheddar)
  • 8 ounces cream cheese, softened
  • 1/4 cup cooked crumbled bacon, about 5 strips
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground cumin
  • 12 large fresh jalapeno peppers, about 1 pound, cut in half lengthwise and seeded (wear gloves while seeding peppers and wash hands immediately afterward)
  • 1 teaspoon paprika, for garnish

Preparation

Step 1

1. Preheat the oven to 300 and spray a sheet pan with vegetable oil
2. Add all ingredients, except the peppers and paprika, to a bowl and mix well to combine
3. Working over the sheet pan, spoon the cheese mixture into each of the 24 seeded jalapeno pepper halves, overfilling them slightly
4. Sprinkle lightly on top with paprika and bake for about 30 minutes. Serve hot.
