Ingredients
- 8 cups water
- 4 large carrots
- 4 large onions
- 2 leeks
- 2 celery stalks
- 2 parsnips
- 2 scallions
- 1 (16 oz) can tomatoes
- 2 cloves garlic
- 2 sprigs parsley
- 1 bay leaf
- 10 whole peppercorns
Preparation
Step 1
Bring water to a boil. Add all ingredients except the bay leaf and peppercorns. Bring to a second boil and add bay leaf and peppercorns. Reduce heat and simmer covered 2 hours, skimming occasionally. Strain soup; discard vegetables. There should be approximately 4 cups remaining. Add salt and pepper to taste.
