Ingredients
- 2 strips of bacon, diced small
- 1/2 cup sweet onion, diced small
- 1/2 cup red bell pep, diced small
- 2 cups sweet corn, cut from cob
- 3 Tbsp flour
- 3 cups vege broth
- 1 cup red pots, diced med
- 1 cup heavy cream
- 1 Tbsp freshly chopped parsley
- salt and pep
Preparation
Step 1
Cook bacon, add onions, pep and corn and stir for 2 mins. Add flour and stir for 1 min. Add broth and stir until smooth. Bring to a boil, add pots and simmer for 15-20 mins. Add cream. Simmer for 2 mins. Season with parsley, salt and pep.
