Crab Tacos con Juevos

Ingredients

  • * 6 ounce can of white lump crab meat
  • 4 * 4 large eggs
  • 1 * 1 teaspoon taco seasoning
  • 6 * 6 small corn tortillas
  • 6 * 6 ounces cheddar cheese, shredded
  • 1 * 1 teaspoon butter
  • * jalapeno pepper slices for topping
  • * Salt and pepper to taste
  • * Hot sauce to taste (if desired)

Preparation

Step 1

1. In a small pot, add crab meat and taco seasoning. Mix well and simmer on low to keep warm.
2. Heat a frying pan to medium and add butter.
3. Beat eggs and add to frying pan. Season with salt and pepper.
4. Stir eggs frequently, about 2-3 minutes, until eggs are cooked through.
5. Heat tortillas and distribute egg over each.
6. Top eggs with seasoned crab meat, cheese, jalapeno slices and hot sauce as desired.
7. Serve!
