Papaya & Mango Tapioca

Ingredients
- 1/2 cup small pearl Tapioca
- 1/4 cup unsweetened coconut cream
- 2 Tbsp granulated sugar
- 1 large mango, peeled and diced
- 1/2 med or large papaya, peeled, seeded and sliced
- Juice of 1 lime
- 4 tsp demerara or other raw sugar orgrated palm sugar

Preparation
Step 1
Bring 4 cups water to a boil over high heat. Reduce heat to a simmer, add tapioca, and cook until translucent, 12 - 15 min. Drain thoroughly through a fine mesh sieve. Put in a bowl and stir in coconut cream and granulated sugar, stirring to dissolve sugar. Cover and chill for at least 1 hour or up to 24 hours.
Divide among individual serving bowls and top with fruit. Dizzle with lime juice and sprinkle with demerara sugar.
