Ingredients
- 1 large can tomato juice
- 1 can chopped tomatoes (any size will do, fire roasted are especially good)
- 1 onion, chopped
- 2-3 cloves garlic
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil
- 1 teaspoon cumin (whole seeds crushed, or the ground kind)
- 2-3 limes
- tortilla chips
- grated monterey jack cheese
Preparation
Step 1
Saute onions in oil for 3-4 minutes, or until soft. Add garlic and pepper flakes and saute one more minute. Add tomato juice and tomatoes and simmer 15-20 minutes. Squeeze in lime juice and serve, sprinkled with crushed tortilla chips and cheese.
