Rhubarb Torte with Meringue


This is my husband's favorite rhubarb dessert.

  • Crust:
  • 1 c flour
  • 1/3 c powdered sugar
  • 1/2 c butter
  • Filling:
  • 3 egg yolks
  • 1 c sugar
  • 1/4 c flour
  • 3/4 teas salt
  • 3 c rhubarb, chopped
  • Meringue:
  • 3 egg whites
  • 6 T sugar
  • 1/4 teas salt
  • 1/8 teas cream of tartar



Step 1

Mix crust ingredients together until crumbly. Pat into a 9 inch pan and bake at 350 for 15 minutes. Mix together the rhubarb, egg yolks, sugar, flour and salt. Pour over crust and bake for 35 minutes. Beat the egg whites stiff and gradually add the sugar, salt and cream of tartar. Beat until stiff. Spread over the torte and bake for 10 minutes or until meringue is lightly browned.
