Veggie Mushroom Rice

Ingredients

  • 1 Sm. Onion, chopped
  • 1 Sm. Green Pepper, chopped
  • 1 Sm. Red Pepper, chopped
  • 1/4 C. Celery, chopped
  • 1 Tbsp. Canola Oil
  • 11/2 C. Fresh Mushrooms, sliced
  • 1 Garlic Clove, minced
  • 11/4 C. Uncooked Long Grain Rice
  • 21/2 C. Water
  • 11/2 tsp. Rubbed Sage
  • 1 tsp. Dried Parsley Flakes
  • 1 tsp. Dried Thyme
  • 3/4 tsp. Salt
  • 1/8 tsp. Pepper

Preparation

Step 1

In a lg. non-stick saucepan, saute the onion, peppers & celery in oil for 2 min. Add mushrooms & garlic; saute 3 min. longer or till vegetables are crisp-tender. Stir in the rice, water & seasonings; bring to a boil. Carefully transfer to a 2 qt. baking dish coated with cooking spray. Cover & bake at 350 for 45-50 min. or till rice is tender. Serve.
