Ingredients
- 8 oz. spiral pasta
- 1 lb. Italian sausage, cut into 1/2 inch slices
- 1 onion, chopped
- 1-3 cloves garlic, minced
- 1/2 cup chopped fresh parsley
- 1 cup chicken stock
- 1-2 (16 oz.) cans tomatoes
- 1 (10 oz.) package frozen peas, thawed
- 2 tsp. chopped fresh basil
- 1/2 cup grated parmesan cheese
Preparation
Step 1
Cook pasta according to package directions; drain and keep warm.
Brown sausage on both sides in a large skillet over medium-high heat. Add onion, garlic and parsley; saute until onion is tender. Add stock, tomato, peas and basil. Bring mixture to a boil; reduce heat and simmer until peas are tender ( Cooking longer will enhance flavor.)
Toss cooked pasta with cheese in a large pasta bowl; top with sauce. Sprinkle with additional cheese, if desired.
