Ingredients
- For Sauce:
- 12 manicotti, cooked according package directions, drained
- 3/4 lb. extra-lean cooked ham
- 2 oz. low fat Swiss cheese, grated (1/2 C.)
- 2 oz. park skim mozzarella cheese grated (1/2 C.)
- 1/4 tsp. freshly ground black pepper
- 2 1/2 C. liquid nonfat milk
- 1 T. corn oil margarine
- 3 T. unbleached flour
- 1/8 tsp. salt
- Dash freshly ground black pepper
- 1 oz. Parmesan cheese, freshly grated (1/4 C.)
Preparation
Step 1
1. Preheat oven to 350 degrees.
2. To make filling, grind ham in food processor. Add Swiss and mozzarella cheeses, nonfat milk, egg mixture, bread crumbs and pepper. Mix well and fill each manicotti with 1/4 cup filling, using either a decorator gun or spoon.
3. To make sauce, bring nonfat milk to simmer. In separate saucepan, melt margarine over low heat. Add flour and cook for 2 minutes, stirring constantly. Do not brown. Remove form heat and slowly add simmering milk, stirring with a wire whisk. Add salt and dash of pepper and cook over low heat 15-20 minutes, stirring occasionally until thickened.
4. Spray 9x13 inch baking dish with nonstick vegetable coating. Spoon in a little sauce to cover bottom. Add manicotti and then pour remaining sauce over the top. Sprinkle with parmesan cheese and bake in preheated 350°F oven for 25 minutes until very hot.
