Walnut & Date Tart

Ingredients
- 1 cup pitted dates, chopped
- 1 cup orange juice
- 1/2 cup light corn syrup
- 2 eggs, lightly beaten
- 1/2 cup light sour cream
- 2 tsp cornstarch
- 1 partially baked 10 inch pastry shell
- 1 cup walnut or pecan halves
- Sliced pears and shipped cream for serving (optional)

Step 1
Preheat oven to 350 F. Combine dates and orange juice in a saucepan and simmer over low heat until dates are soft and pulpy, about 5 min. Remove from heat and whisk in corn syrup and eggs. Stir sour cream and cornstarch together in a small bowl and whisk into date mixture. Pour into pastry shell and sprinkle with nuts. Bake until filling has set in center, about 1 hour.
Let cool in pan on a wire rack, then chill for at least 1 hour. Unmold and cut into slender wedges. Serve wedges with pears and shipped cream, if desired.
Note: This filling can also be used for tartlets. Use 8 partially baked 4 1/2 inch pastry shells and bake for 35 - 40 mintues.
