SAUCE - RED CLAM

Ingredients

  • 1 C. water
  • 1 C. red wine
  • 1 lb. fresh countneck or manilla clams in the shell
  • 1 tsp. tarragon
  • 1 tsp. marjaram or oregano
  • 1 hot pepper, seeded and minced
  • 1 fresh tomato, seeded and diced
  • 1/2 red onion, finely diced
  • 3 T. minced garlic
  • 1 T. tomato paste

Preparation

Step 1

1. Bring water and wine to a boil. Add clams and steam for 3-5 minutes or until clams open. Remove clams.

2. Add remaining ingredients to water and bring to a simmer, then reduce to desired flavor strength and consistency. Remove clams from shells and add to sauce. Serve sauce on pasta.
