Bread Sauce

My Brit's favorite holiday dinner must have.

Ingredients

  • 2 1/2 cups milk
  • 1/2 onion, studded with 3-4 cloves
  • 1 bay leaf
  • 1 thyme sprig
  • 3 celery leaves
  • 4 parsley stalks
  • 2 cloves garlic, crushed
  • 1 1/3 cups fresh white bread crumbs
  • grated fresh nutmeg
  • 2 1/2 tablespoons whipping cream or 3 tablespoons unsalted butter (optional)

Preparation

Step 1

Pour milk into small saucepan, add onion. Tie bay leaf, thyme, celery leaves and parley stalks with string and drop in saucepan. Add garlic and slowly bring to a boil. Remove from heat and let stand 20-30 minutes. Strain and discard the herb bundle and garlic. Return saucepan to heat and bring to boil. Whisk in bread crumbs to thicken sauce. Season with nutmeg, salt, and pepper. Stir in cream or butter, if using. Serve immediately, sauce will thicken as it cools.

Serve over turkey, pork, or meat of choice.
