Ingredients
- 1 1/2 pounds sweet potatoes (I used 2 large)
- 1 1/2 sticks butter or margarine, softened
- 2 cups sugar
- 3 eggs beaten
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground cloves
- pinch salt
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 unbaked 9-inch pie shell (I had enough batter for two pies)
Preparation
Step 1
Wash sweet potatoes and place them in pot, covered with water. Bring to boil. When potatoes are soft (after about 45 minutes), drain, cool, and peel. Using fork or potato masher, mash potatoes in large bowl along with butter and sugar, combining well. Add the eggs. Stir in spices, vanilla, and milk. Pour into pie shell. Bake in 375 degree oven for 45 minutes or until the center is firm.
