Ingredients

  • 2 TBS lemon juice
  • 1/4 c. chopped fresh basil
  • 1/4 c. chopped fresh parsely
  • 1 garlic clove, finely minced
  • 2 TBS evoo
  • 1 lb. fish cut into cubes
  • 12 cherry tomatoes
  • 1 large zucchini cut into 12 pieces

Preparation

Step 1

Soak wood swewers in water for at least an hour.

In a small bowl combine lemon juice, basil, parsley, garlic and olive oil.

Thread skewers, alternating fish and vegetables and place in a baking dish.

Pour marinade over the skewers and cover. Refrigerate for 30 min, but not more than 90.

Grill over medium-high heat for 6-8 min.
