Ingredients

  • 1 package (2 1/4 tsp) active dry yeast
  • 1/4 cup warm water (110-115 degrees)
  • 1/4 cup sugar
  • 2 cups milk
  • 3 eggs
  • 8 Tbsp butter, melted
  • 1 tsp salt
  • 2 1/2 cups all-purpose flour
  • 1/4 tsp baking powder
  • Maple syrup for serving

In the bowl of an electric mixer, combine the yeast, warm water and 1 Tbsp of sugar and stir to dissolve the yeast. Let stand until foamy, about 10 minutes. Add the remaining 3 Tbsp sugar, the milk, eggs, butter, salt, and flour. Fit the mixer with the flat beater and beat on medium speed until smooth, 3 to 5 minutes. Cover the bowl with plastic wrap and refrigerate for at least 12 hours or up to overnight.

Preheat the waffle maker on medium-high heat. Preheat an oven to 200 degrees.

Using a rubber spatula, stir the baking powder into the batter until well blended, about 1 minute (the batter will deflate slightly).

Pour about 2/3 cup of the batter into the center of the waffle maker and close the lid. Cook the waffle until golden brown and crisp, 4 to 5 minutes. Transfer the waffle to a wire rack set on a baking sheet and keep warm in the oven. Repeat to cook the remaining batter.

Serve the waffles hot with maple syrup.
