Ingredients
- 3 cups grated zucchini squash
- 2 cups sugar
- 1 cup vegetable oil
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 3 Tablespoons vanilla
- 3 Tablespoons cinnamon
- 3 eggs
- 1 cup nuts
Preparation
Step 1
Beat eggs until light and fluffy.
Add sugar, oil and vanilla; mix well.
Add all remaining dry ingredients; including nuts.
With hands, blend in zucchini.
Grease and flour 2 loaf pans.
Bake 350 for 1 hour.
