Ingredients
- 1/4 cup margarine
- 1/4 cup well-packed brown sugar
- 2 eggs
- 1 tbsp lemon juice
- 1 tbsp water
- 1 cup finely shredded carrots
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup walnuts, optional
Preparation
Step 1
Beat butter and sugar until creamy. Add eggs and beat until light and fluffy. Stir in water, lemon juice and shredded carrots, sift baking powder and salt into the carrot mixture. Add nuts. Stir only enough to moisten ingredients. Spoon batter into greased muffin pans. Bake in a 375 F to 400 F oven for about 20 minutes.
