SAUCE - FAMOUS BEAUJOLAIS SPAGHETTI

Ingredients

  • 1/2 C. Beaujolais or other red wine
  • 2 C. chopped yellow onion
  • 4 cloves fresh garlic, minced
  • 2 stalks celery, minced
  • 1 large carrot, minced
  • 1/4 C. minced fresh basil leaves
  • 3 bay leaves
  • 1/2 tsp. dried oregano
  • 4 C. chopped tomatoes
  • 1/4 C. tomato paste

Preparation

Step 1

1. In a large heavy pot, heat wine to simmering over medium-high heat. Saute onion in wine for 5 minutes, stirring frequently. Add garlic and celery, and continue to cook 5 minutes. Stir in remaining ingredients. Reduce heat to medium and simmer uncovered for an hour. (This step can also be done in crock pot on low for 5 hours).

2. Remove bay leaves, then puree sauce. Reheat before serving.
