Ingredients
- for the brown sugar bacon
- 1/2 1/2 10 lb. bacon (roughly 10 strips)
- 1/4 1/4 1/4 cup light brown sugar
- for the waffles
- 2 2 2 cups all-purpose flour
- 1 1 1 cup whole wheat pastry flour
- 1/4 1/4 1/4 cup light brown sugar
- 1 1 1 tablespoon baking powder
- 1 1 1 teaspoon baking soda
- 1 1 1 teaspoon salt
- 4 4 4 eggs
- 2 2 2 cups milk
- 1/2 1/2 1/2 cup yogurt
- 2/3 2/3 2/3 cup canola oil, or, if you like living on the edge, bacon drippings
- to waffle iron to medium heat.
- 1/4 to 200 per waffle on to the waffle iron. Keep cooked waffles warm on a platter in a 200 degree oven.
- Serve with a little bit of butter and plenty of maple syrup.

Preparation
Step 1
for the bacon
Preheat oven to 375 degrees. Arrange the bacon slices in a large baking dish, or rimmed baking sheet. Sprinkle the sugar over the bacon. Bake for 15 – 20 minutes, until the bacon has nice color and is caramelized. Set the bacon onto a cutting board to cool, and once cool, slice into tiny bits.
Preheat waffle iron to medium heat.
In a large mixing bowl, combine the flours, sugar, baking powder, baking soda, and salt. In a smaller mixing bowl, lightly whisk the eggs, and then whisk in the milk , yogurt, and oil. Pour the wet ingredients into the dry, mixing just until combined. Fold in to bacon bits.
Pour 1/4 cup per waffle on to the waffle iron. Keep cooked waffles warm on a platter in a 200 degree oven.
Serve with a little bit of butter and plenty of maple syrup.
