Ingredients
- 1 T. oil
- 1 lb. cooked pork roast, cubed or shredded
- 1 c. onion, chopped
- 1 c. green pepper, cut into 3/4-inch cubes
- 1 c. red pepper, cut into 3/4-inch cubes
- 1 t. garlic, minced
- 8-oz. can pineapple chunks, drained
- 1 c. catsup
- 1 T. brown sugar, packed
- 1 T. white vinegar
- 1/2 t. salt
- 1/4 t. pepper
- cooked rice
Preparation
Step 1
Heat oil in a large skillet over medium heat. Add pork, onion, peppers and garlic to oil. Cook, stirring occasionally, for 5 to 10 minutes, until heated through and vegetables are tender. Drain; add remaining ingredients except rice. Cover and simmer 10 minutes, until warmed through and slightly thickened. Serve over hot rice.
Serves 6 to 8.
