Hearty Barley and Lentils

Ingredients

  • 3 cups water
  • 1/2 lb dry barley
  • 1 and 1/2 pound green lentils
  • 1 bay leaf
  • 1 medium onion, chopped
  • 1 garlic cove, minced
  • 1 Tbsp olive oil
  • 4 cups vege stock
  • 1 10 oz can condensed tom soup
  • 1/2 tsp paprkia
  • 1/2 tsp curry powder
  • salt and pep
  • 1 med tom, chopped
  • 1/2 cup sour cream

Preparation

Step 1

In a large pot, bring water to a boil. Stir in barley, lentils and bay leaf. Simmer over med heat, about 15 mins, until liquid is nearly gone.
In a small skillet over med heat, saute onion and garlic in oil until onions ate translucent, about 5 mins.
To barley mixture, add onion, garlic, stock, soup, paprika, curry powder, salt and pep. Cook over med heat, about 30 mins, until liquid is almost gone. Stir in tom and sour cream and cook over med-low until toms are tender, about 5 mins.
