Cottage Cheese Stuffed Tomatoes

Ingredients

  • 4 large Ripe tomatoes
  • 1 cup Small curd cottage cheese
  • 1/2 cup Finely diced celery
  • 1/4 cup Chopped ; peeled cucumbers
  • 1/4 cup Chopped green pepper
  • 2 Tbsps. Minced onion
  • 2 Tbsps. Mayonnaise
  • Salad ; greens
  • WAtercress

Preparation

Step 1

Wash tomatoes, cut 1/2 in slice form stem and scoop out pulp, leaving a 1/4 inch shell. Mix cottage cheese, celery, cucumber, green pepper, onion and mayonnaise in a small bowl. Spoon mixture into tomatoes. Serve on a bed of greens and top each tomato with a sprig of watercress.

Note: I did not scoop out the tomatoes. I didn't want to lose all that tomato, so I just cut them into sections, slitting them almost to the bottom of the tomato.
