Ingredients
- Cucumber and Mint
- Tabbouleh with Chicken
- 2 chicken breasts, cooked and chopped
- 1 1/2 c bulgur
- 3 tomatoes, seeded and chopped
- 2 cucumbers, peeled and chopped
- 3 green onions, chopped
- 4 garlic cloves, minced
- 1 c parsley, chopped
- 1/3 c mint, chopped
- (2 t salt)
- (1/2 c lemon juice)
- (2/3 c olive oil)

Preparation
Step 1
To cook chicken: Fill a med saucepan with water.
Bring to a boil. Place raw chicken in water. Cook for
20 min. Drain. Cool and chop. Set aside.
Cook bulgur according to package directions. Toss
with tomatoes, cucumbers, onions, garlic, parsley,
mint, salt, lemon juice, and olive oil. Add chicken and
season to taste. serve in Pita Bread
