Salad/Apple Gorgonzola Salad with Spiced Walnuts

Ingredients

  • 1 medium Granny Smith apple chopped into 1" pieces
  • 8 oz Romaine chopped inot 2" pieces
  • 2 tbsp Gorgonzola cheese
  • 1/4 cup dried cranberries
  • 2 oz spiced walnuts, chopped
  • 1/2 cup Vinegaigrette
  • Spiced Walnuts
  • 1 cup walnuts
  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1/2 tsp cayenne pepper

Preparation

Step 1

Slice off 2 sides of apple along side the core.
Cut long slices for garnish and then chop the rest into 1/2" cubes
Wash and cut lettuce.
Dry the lettuce as much as possible in the spinner.
Prepare cheese.
Chop walnuts, add 3/4 of the walnuts and 3/4 of the cheese. Saving the rest for garnish.
Toss well.
Place and garnish with remaining walnuts, cranberries and Gorgonzola cheese.
Garnish the rimof the plate with the sliced apples.

Spiced Walnuts:
Preheat oven to 350
Melt butter in saute pan
Add brown sugar, cinnamon, cayenne pepper and walnuts; mix well
Place on cookie sheet and bake about 5-7 minutes watching carefully not to burn.
Remove from oven and cool.
