Banana Muffins

Ingredients

  • 1/2 cup oil
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 4-5 ripe bananas
  • 1/2 cup yogurt/sour cream
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips

Preparation

Step 1

Preheat oven to 350 degrees.

Beat oil and sugar in a bowl for 1-2 minutes. Add eggs one at a time and beat until light and fluffy. Stir in vanilla, banana and sour cream/yogurt. In a small bowl stir together flour, baking powder, baking soda and salt. Add to banana mixture along with the chocolate chips and combine well. Spoon mixture into a prepared muffin pan. Bake 25-30 minutes.
