Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. fine salt
  • 3/4 cup granulated sugar + 2 tsp. for sprinkling
  • 8 Tbsp. (1 stick) unsalted butter, melted
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 Tbsp. vanilla extract
  • 2 cups blueberries

Preparation

Step 1

Heat oven to 400 degrees F (375 degrees for dark pans).

Whisk together flour, baking powder, and salt in a large bowl and set aside.

Whisk together ¾ cup sugar, melted butter, heavy cream, eggs, and vanilla extract in a medium bowl until smooth.

Add this and blueberries to flour mixture and stir until just mixed.

Fill muffin wells then sprinkle sugar on top.

Bake approximately 20 minutes, cool on rack 5 minutes
