Vegetable Casserole

Ingredients

  • 3 C cauliflower florets
  • 1 # carrots (slice 1/2" thick)
  • 1 # broccoli (cut into 1" pieces)
  • 1 C reduced calorie mayonnaise
  • 1/4 C finely chopped onion
  • 3 # prepared horseradish (drained)
  • 1/4 t salt
  • dash pepper
  • 1/2 C fine dry bread crumbs
  • 2 T melted butter or margerine
  • 1/8 t paprika

Preparation

Step 1

In a 3 qt saucepan, cook cauliflower & carrots; covered in a small amount of boiling water for 5 minutes. Add broccoli and cook 5 more minutes or until crisp and tender. Drain. In a small bowl, combine mayo, onion, horseradish, salt & pepper. In a 2 qt casserole, combine vegetables and mayo mixture.

In a small bowl, combine bread crumbs, melted butter and paprika. Sprinkle over vegetable mixture. Bake uncovered in 350 degree oven for 15 minutes or until heated through and topping is golden.
