Apple Buttermilk Muffins

A great breakfast muffin especially in the fall when apples are ripe. You can use your favorite apple.

Ingredients
- 2 c flour
- 1/2 c brown sugar
- 2 teas baking powder
- 1 teas baking soda
- 1/2 teas salt
- 1 c buttermilk
- 1/4 c oil
- 2 teas vanilla
- 1 large egg
- 2 cups apples, diced and peeled
- 1 T sugar and 1 teas cinnamon, mixed together

Preparation
Step 1
Preheat oven to 400. Grease 12 muffin cups. In a bowl mix first five ingredients. In a bowl beat buttermilk, oil, vanilla, and egg until blended. Stir in flour mixture just until moist (batter will be lumpy). Fold in apples. Spoon batter into muffin cups and sprinkle with the sugar and cinnamon mixture on top. Bake muffins for 25 minutes. Serve warm
