For coconut cream cake, strawberry cream cake. Excellent moist yellow cake.
- l/2 cup shortening ( Crisco )
- l/2 cup Margarine
- 2 cups sugar
- 2 cups flour
- 5 eggs separated
- 1 tsp baking soda
- 1 cup buttermilk
- 1 tsp vanilla
Preparation time 30mins
Cooking time 60mins
Bake 350 degrees for 25 - 30 minutes. 9" Cake pans.
In a large bowl of a mixer blend shortening, margarine on high speed. Add sugar and beat until fluffy. Add egg yokes one at a time. Beat well. Sift flour and soda together. Add alternately with buttermilk. Beat egg whites until stiff. Fold into batter. Bake at 350 degrees for 25- 39 minutes.
Bake in 3 9 " cake pans greased and lined.
If making a coconut cake add l 2/3 cup flaked coconut to batter.
