Ingredients
- 1 cup grated carrots
- 1 cup grated zucchini
- 1 cup brown sugar
- 1 cup raisins
- 1 cup hot water
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/2 tsp salt
- 1/2 cup oil
- 1/2 cup wheat germ
- 2 cups whole wheat flour
- 1 tsp baking powder
- 1/2 cup chopped walnuts
Preparation
Step 1
Put the first 10 ingredients (grated carrots through oil) in a medium saucepan and bring to a boil, for 4 minutes. Cool and then add the last 4 ingredients (wheat germ through walnuts). Bake in greased pan at 350 F oven for 45 to 50 minutes. Test with a toothpick.
