Chicken Tortilla Bake

A great casserole with a Mexican flair and you can even use left over turkey from Thanksgiving instead of chicken.

Ingredients

  • 3 c shredded cooked chicken or turkey
  • 2 cans (4oz) green chilies, chopped
  • 1 c chicken broth
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 small onion, finely chopped
  • 12 corn tortillas
  • 2 cups (8 oz) shredded cheddar cheese

Preparation

Step 1

In a bowl combine chicken, chilies, broth, soups, and onion. Set aside. Layer half the tortillas on the bottom of a 9 x 13 pan, cut to fit. Top with half of the chicken mixture and half the cheese. Repeat the layers again and bake uncovered at 350 for 30 minutes.
