Alicia’s Zucchini Drop Cookies

Ingredients

  • 1/2 cup margarine
  • 1 cup brown sugar
  • 1 egg, well beaten
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup zucchini, shredded, unpeeled
  • 1 tsp almond extract
  • 1/2 cup grated carrots or 1/2 cup of raisins, optional

Preparation

Step 1

Cream margarine and gradually add brown sugar. Cream well. Beat in well beaten egg. Mix well. Sift flour, baking powder, baking soda and salt. Add to the sugar mixture. Blend altogether. The dough should resemble a “crumble” mixture. Fold in the zucchini and almond extract. Drop 1 tablespoon of cookie batter on the cookie sheet, 2 inches apart. Bake at 400 F for 10 to 15 minutes.
